Leesh and Lu here.  We are excited to be sharing this quick and tasty dinner idea with you today.  With Christmas nearly upon us, this time of year is exciting, magical, and busy for everyone.  As much as we love holiday baking and decadent desserts, when it comes to recipes, what we’re really usually looking for something wholesome and simple to keep our families fed.  This honey chicken and veggie stir fry is a great one to keep tummies filled with something nutritious and saves you from spending a ton of time on dinner prep.

This stir-fry is chock-full of veggies (peppers, broccoli, carrots, peas, & mushrooms to be exact), and tender bites of chicken.  Finish it off with a glaze of soy sauce, and honey and serve it over hot rice and you have a filling, delicious meal to stave off whining and keep you sane.

Honey Chicken Stir Fry

Honey soy sauce glazed over fresh stir-fried veggies and tender chicken pieces. Serve over hot rice for an easy nutritious meal.

Ingredients

  • 2-3 Tablespoons Olive Oil
  • 1-2 cloves garlic finely minced
  • 4 ounces mushrooms sliced
  • 4 medium-sized carrots peeled and sliced
  • 2 cups snow or sugar snap peas
  • ½ cup yellow onion diced
  • ½ red bell pepper sliced or diced
  • 1 pound chicken breast tenderized and cut into bite sized pieces
  • salt and pepper to taste
  • For the sauce:
  • ¼ cup honey
  • 3 tablespoons soy sauce
  • 1 tablespoon water
  • 2 teaspoons cornstarch
  • Hot cooked rice for serving

Instructions

  1. Preheat a large nonstick skillet or wok to medium-high. Once hot, add 2 tablespoons of oil and veggies and stir fry until they are crisp-tender. Remove from pan and keep warm.
  2. In the same skillet, add 1 tablespoon oil and chicken pieces. Season with salt and pepper and cook until chicken is no longer pink and juices run clear. While chicken is cooking, whisk together the sauce. Add garlic to the chicken and cook for 30 seconds to 1 minute longer.
  3. Combine the honey, soy sauce, water, and cornstarch in a small mixing bowl. Pour sauce over chicken and simmer for 2-3 minutes until sauce starts to thicken. Add cooked veggies back in and heat through. Serve immediately over hot, cooked rice.
