A couple summers ago at a summer festival I got some mac and cheese from a food truck. It was topped with bbq pulled pork and all my mac and cheese dreams came true. So, I knew I had to re-create it. It’s a great use of leftovers you may have, and it’s an awesome combination of flavors I think you’ll love.
I love having salad for dinner, but have kind of steered away from it while I’ve had toddlers at home. Without any, or many, molars it’s hard for them to chew and I don’t like to have to make a separate dinner for them. While the recipe is simple, the taste is incredible! The roasted red pepper is definitely the star of the show! Start by sauteing onions, garlic, and roasted red peppers in a olive oil. Blend until smooth and creamy. Add chicken broth, spices, cream and Parmesan. Spoon the sauce over pasta, top with diced chicken, and big shavings of Parmesan if desired, and dig in!

This is something we ate growing up, so eating it always makes me feel a bit nostalgic. Lu concocted this amazing garlic chicken sauce as a refreshing change from the customary of chicken soup that is often used in Hawaiian haystacks. Speaking of haystacks, what do you call this dish? When my husband’s family says “haystacks” they are referring to what I call “frito chili pie/walking tacos”. I’m just going to call it delicious.
