Mini bagel pizzas are a really fun way to serve up a meal the family may otherwise be getting tired of. Try this version of pizza in the toaster oven, too, to keep that extra heat to a minimum in the kitchen this summer!

Mini Bagel Pizzas (she: Kathy)

Hello! It’s Kathy from Beyond the Chicken Coop! Lunch at our house always seems to be frenzied. You would think during the summer or on weekends during the school year that lunch time would be relaxing. In reality, we are often rushing to get lunch on the table and get out the door to our next event. These mini bagel pizzas are a go-to favorite for my family.

Omelet-Style Breakfast Sandwiches (she: Leesh & Lu)

Hey all! Leesh & Lu here. I guess it might be a stretch to really call this a recipe, so let’s just call it dinner (or breakfast!) inspiration. This is one meal I will never tire of. I ate it at least 4x per week for 2+ years and always looked forward to it. You can customize the ingredients any way you’d like, and even try your hand at making your own english muffins some time!

Try this summer strawberry salad paired with grilled chicken, bacon and creamy poppyseed dressing. The kids will LOVE all these elements, even if you have to separate them on the plate! Sweet Pork Nachos baked in the oven is a fun twist on a family favorite - there's just something about scooping up the goodness with a chip that makes this so much fun to eat!

Sweet Pork Nachos – A Fun Twist on a Favorite! (she: Leesh & Lu)

Sweet Pork Nachos could be made as your main meal, or as a meal made from leftovers the next day! This meal does have several components, but if you also plan a salad or enchilada or taco night using the same meat it will cut your prep time and be well worth your while. While the recipe is called sweet pork nachos, I think that substituting some marinated grilled chicken or steak would be equally delicious here!

Roasted Red Pepper Pasta - With or Without Chicken

Roasted Red Pepper Pasta {with or without Grilled Chicken} (she: Leesh & Lu)

While the recipe is simple, the taste is incredible! The roasted red pepper is definitely the star of the show! Start by sauteing onions, garlic, and roasted red peppers in a olive oil. Blend until smooth and creamy. Add chicken broth, spices, cream and Parmesan. Spoon the sauce over pasta, top with diced chicken, and big shavings of Parmesan if desired, and dig in!

Baked egg rolls are so moist and delicious. You'll never want deep fried egg rolls again.

Baked Egg Rolls – Less Mess Than Frying! (she: Kathy)

Hello! It’s Kathy, from Beyond the Chicken Coop! My daughter and I love cooking together. We’ve made egg rolls a few times in the past and she was having a craving for them recently. We decided to bake these instead of deep frying them. Baked egg rolls are just as delicious and there’s no messy frying oil to deal with.

Hawaiian Haystacks

Hawaiian Haystacks with a Creamy Garlic Chicken Sauce (she: Leesh & Lu)

This is something we ate growing up, so eating it always makes me feel a bit nostalgic. Lu concocted this amazing garlic chicken sauce as a refreshing change from the customary of chicken soup that is often used in Hawaiian haystacks. Speaking of haystacks, what do you call this dish? When my husband’s family says “haystacks” they are referring to what I call “frito chili pie/walking tacos”. I’m just going to call it delicious.

Jamaican Jerk Chicken Pasta Recipe - A quick and delicious semi-homeade recipe you'll love!

Jamaican Jerk Chicken Pasta (she: Mara)

I’ve been obsessing over the cuisines of the Caribbean for the past few months. While I’d love to drop everything and jump on a plane, eating tropical food is the closest I can get to a tropical vacation at the moment. Even though this winter has been relatively mild in Michigan, I certainly wouldn’t say no to a beach getaway! Watching episodes of The Bachelor filmed in the Bahamas and Jamaica hasn’t helped quell my wanderlust, either. But honestly, perhaps the reason I’ve been craving Caribbean food is just the fact that it is all-around awesome and positively bursting with flavor. Sweet, savory, spicy…it’s got it all!

White Chicken Chili with Mozzerella Biscuits

White Chicken Chili with Mozzarella Biscuits (she: Mara)

If you’re looking for a hearty and healthy meal that will surely make you smile, this white chicken chili has got you covered. Don’t let its name fool you, though; it may be bordering on the monochromatic, but it has tons of flavor! Tender chicken, creamy white beans, and sweet corn make up the bulk of the chili, with some green chiles and a jalapeño thrown in for a touch of heat, as well as a splash of lime juice.
