15 Minute Meal – Creamy Tomato Fettuccine with Salmon (she: Nicky)

Although my family aren’t too fussy when it comes to dinner time (ok, we’re all human dust-bins really), I do struggle with meat-free dishes.

If I serve up a completely vegetarian dish, I usually find everyone looking up expectantly, waiting for me to put the ‘main dish’ on the table.
I’ve had a couple of great successes (my Cheesy Veggie burgers were a real hit – no bacon required yay!), but for the most part, trying to get one or two meat-free dishes in per week simply isn’t going to happen.

Now fish – I know I can get away with. So meals like this Creamy Tomato Fettuccine with Salmon are my savior in trying to reduce the meat consumption just a little.

Given the opportunity to get messy, dip fingers in and lick the spoon, I think most kids love cooking. Cooking with kids is so important because it not only teaches them important skills, but being involved often gets them more excited to eat meals.

My kids – Gracey aged 8 and Lewis aged 5 – have been making kitchen creations since they were toddlers.

Since I’m a busy mama with a preschooler, toddler and now a newborn, I wanted to share with you one of our family’s favorite winter recipes using the greatest kitchen appliance every invented (in my opinion at least) … the slow cooker.

I love the simplicity of throwing all the ingredients in during the morning hours, setting the timer and walking away allowing it to slowly cook a savory and mouthwatering dish to be ready just in time for dinner.

I probably use my slow cooker at least twice a week, even more now that my days just got a lot busier!

One of our family’s favorite winter recipes is this easy slow cooker Santa Fe Chicken Soup recipe. Not only is it packed with flavor but it’s also pretty frugal to make too which is always a plus in my book! I love easy, delicious, crowd pleasing recipes that uses simple ingredients, many of which I usually always have on hand in my pantry, freezer or refrigerator.

Happy Fall Or So She Says readers! It’s Jana here again from Double the Deliciousness and I’ve got a recipe that is so hearty, cheesy and perfect for Fall that it’ll be a staple on your Fall menu. For my family it’s a weekly staple!

I love that it is pretty inexpensive (minus the bacon…jeeze it’s getting out of control!) and easy to throw together. We don’t even peel our potatoes, just wash well and dice. This cheesy bacon potato soup can be ready in about 30 minutes. Perfect!
