So, this recipe has actually been shared on the blog before. I’ve been trying to go through some of my old ones with super crappy pictures and update them, so they actually LOOK good, besides just taste good. I recently updated a great recipe for Chicken Alfredo. Today it’s our favorite Broccoli Cheese Soup. I love making this soup for several reason… 1. I love soup. 2. I love broccoli. 3. I love cheese. 4. It uses REAL cheese. 5. It’s delicious. Five good reasons, I would say. And, now is the perfect time to bust out those soup recipes. Be sure to add this to your collection! Broccoli Cheese Soup
Broccoli Cheese Soup
Servings 8 servings
Ingredients
- 4 cups chicken broth
- 1 small onion chopped or 1 TBS dehydrated onion
- 1/2 tsp. garlic salt
- 2/3 cup flour
- 1/2 cup butter
- 1/2 tsp. pepper
- 4 cups milk
- 3 cups extra sharp cheddar cheese shredded (I like LOTS of cheese!)
- 1 cup Swiss cheese shredded
- Broccoli florets steamed & chopped (I used about a bag of frozen…amount is totally your preference. I also like to chop my florets in tiny pieces with small chunks.)
Instructions

Simmer chicken broth and chopped onion for 15 minutes in a covered saucepan, until onions are soft. (Because I just used dehydrated onions, it didn’t have to heat so long)

Heat the milk in the microwave for 1 to 2 minutes.

In a large stockpot, melt the butter.

Add the flour and pepper, whisk and cook together for a couple of minutes.

Whisk in warmed milk. Continue to stir and cook until the soup starts to thicken.

Next add the chicken broth and continue to stir until well blended.

Add the cheeses and steamed broccoli.
