Happy New year everyone It’s Jana from Double the Deliciousness. I love the fresh start that a new year brings. It’s a great time to reflect and see what improvements you can make in your life. One of my fresh starts/goals that I try to achieve every year is to eat healthier and exercise regularly. I always start off doing really well because I think my body is in a state of sugar/junk overdose and my body really likes the idea of vegetables & good for you food!
And that is just what this sandwich is! Chuck full of veggies and good for you, this healthy Greek chicken pita sandwich is sure to wow. Just what my body is craving at this point. And to make it even better, this one is so quick and easy and tastes as good as any full fat recipe out there!
Healthy Greek Chicken Pita Sandwiches
2 boneless, skinless chicken breasts, cut into bite size pieces (about 1 inch)
1/3 cup fat-free Caesar salad dressing
1/4 cup crumbled feta cheese
1/4 cup olives (any flavor you like), chopped finely
1/4 teaspoon garlic powder
2-3 pita breads, halved
lettuce
tomato
red onion, thinly sliced
Cook chicken over medium heat in a large pan coated with non stick cooking spray until starting to brown & no longer pink. Add the dressing, cheese, olives and garlic powder and stir until heated through.
Place lettuce, tomatoes and onion on one half of each pita and then stuff with about 1/3-1/2 cup chicken filling. Yield: 4-5 half pita sandwiches.

I CRAVED pitas last winter when I was pregnant. This looks so good!
The only problem is that there is feta in this recipe, so if you’re pregnant leave it out or use a different “okay” cheese. Still Really good…I just saved me some before I added the cheese so I could have one too!:) Pitas are a really good pregnant food!:)
