Hi again, friends! It’s Cathy from Lemon Tree Dwelling….back here today to share a fun fall kids recipe as part of this month’s blog hop. Living in the Midwest, the change of seasons is one of my favorite things ever….and just this week , it seems that we are making the transition from summer to fall. Time to bring out those pumpkin recipes….!
This Pumpkin Chocolate Chip Mug Cake is perfect for fall…..and not just because of the pumpkin, but because it’s a great way for kids to get involved in the kitchen! With the start of the school year, my kids want nothing more than a little extra time with mom. What better place to get it than the room I clearly spend the most time in??
All it takes is a little measuring, pouring, and stirring…..followed by a quick 3 minutes in the microwave…..and voila! The cake is ready! No waiting patiently while it bakes….and, even better, it’s something that kids can do almost entirely on their own.
Perfect for a dessert or an afternoon snack. Perfect for kids! And SO delicious! So…..are you ready for fall? Are you ready for fall fun with your kids? I know I am………bring it on!!
Pumpkin Chocolate Chip Mug Cake (she: Cathy)
Ingredients
- 1/4 c. flour
- 1/4 c. sugar
- 1/2 tsp. pumpkin pie spice
- 1 egg
- 3 Tbsp. pumpkin pie filling OR pumpkin puree
- 2 Tbsp. chocolate chips
Instructions

Combine flour, sugar, and pumpkin pie spice in a microwave safe mug.

Stir in egg.

Add pumpkin pie filling or pumpkin puree and 1 Tbsp. chocolate chips and stir until all ingredients are thoroughly combined.

Sprinkle remaining 1 Tbsp. chocolate chips on top.

Microwave at high power 2 minutes.

Carefully remove from microwave, top with a few additional chocolate chips and enjoy!

I don’t care if this is just for kids. I’m making it for MYSELF while my daughter’s at preschool. But, y’know, just to test it out and make sure it’s good.

Hi Cindy! I used this recipe in a smaller mug and it was fine! Depending on the size of the mug, it will puff up over the top while it’s cooking, but will sink down once you remove it. Just to be safe, you may want to place the mug on a paper towel to catch any overflow 🙂

I don’t know if I did something wrong but I tried this tonight with awful results. Mine didn’t look anything like the picture. The chocolate chips sunk to the bottom and the cake was weird and spongy (almost reminded me of a bread pudding). Any tips?

So sorry to hear that, Megan! I made the cake multiple times for multiple kids and it turned out each time…..I will say the texture is somewhat of a mix between bread pudding and cake, but we liked that it was super moist. As for the chocolate chips, they won’t stay on top but they also shouldn’t all sink to the bottom. I threw a few chips on top once it came out of the microwave. Hope this helps!

Same experience as Megan when I made it tonight. My guesses are a microwave that is too powerful or a mug that’s too tall. Megan, have you experimented any more with the recipe to see what might have gone wrong for us?

Okay, ladies……after reading both of your comments I decided to do some tests of the recipe. Here’s what I found: mug size/height definitely does make a difference. The taller the mug, the less room the cake has to “breathe” and it becomes soggier. SO…..here’s my recommendation. If you are using a mug somewhere around 4 inches tall, omit the milk altogether. Stir 1 Tbsp. of the chocolate chips into the mix and throw the rest on top. Micro for 3 minutes and I think you will be much happier with the results! Let me know if you have a chance to try it. (I will adjust the recipe accordingly.) Thanks!

Made this for a study session treat and it was wonderful! Tasted a tad egg-y so maybe use just the whites of one or two eggs instead? Still delicious!
