Sometimes we get stuck in a dinner rut and eat the same things week after week. This meal helped pull us out of our rut and it was refreshing to try something new and have it be well received by the whole family (including the 18-month old!). I can’t say I’ve ever had Japanese Yakisoba before, so I can’t speak for the authenticity of this dish, but I can speak for the deliciousness!

I love having salad for dinner, but have kind of steered away from it while I’ve had toddlers at home. Without any, or many, molars it’s hard for them to chew and I don’t like to have to make a separate dinner for them. It took a while for me to figure out that the little ones love deconstructed salad just as much I love having it for dinner. Duh.
