This meal does have several components, but if you also plan a salad or enchilada or taco night using the same meat it will cut your prep time and be well worth your while. While the recipe is called sweet pork nachos, I think that substituting some marinated grilled chicken or steak would be equally delicious here!

While the recipe is simple, the taste is incredible! The roasted red pepper is definitely the star of the show! Start by sauteing onions, garlic, and roasted red peppers in a olive oil. Blend until smooth and creamy. Add chicken broth, spices, cream and Parmesan. Spoon the sauce over pasta, top with diced chicken, and big shavings of Parmesan if desired, and dig in!

I’ve been obsessing over the cuisines of the Caribbean for the past few months. While I’d love to drop everything and jump on a plane, eating tropical food is the closest I can get to a tropical vacation at the moment. Even though this winter has been relatively mild in Michigan, I certainly wouldn’t say no to a beach getaway! Watching episodes of The Bachelor filmed in the Bahamas and Jamaica hasn’t helped quell my wanderlust, either. But honestly, perhaps the reason I’ve been craving Caribbean food is just the fact that it is all-around awesome and positively bursting with flavor. Sweet, savory, spicy…it’s got it all!
