At our house, we’ve been enjoying pretty much everything about fall. The new routine of school and other activities has helped our family find a nice rhythm and of course, we’ve been doing our share of fall baking.
With fall baking, often there’s a little left over pumpkin puree in the fridge. Instead of letting it get old, I’ve been putting pureed pumpkin into our smoothies and it not only tastes good but, it’s also super healthy.
Did you know that just 1/2 cup of pureed pumpkin contains:
- Only 40 calories
- Less than 1 gram of fat
- 5 grams of fiber
- Only 4 grams of sugar
- 2 grams of protein
- A HUGE amount of Vitamin A {300%!}
Pumpkin & Fruit Smoothie
Ingredients
- 2 ripe bananas
- 1 orange
- 1/2 cup pureed pumpkin
- 1/2 cup vanilla yogurt
- 1/2 milk or your favorite fruit juice
Instructions

Mix all ingredients together in a blender.

If you like your smoothie extra cold, add a few ice cubes.

When you make smoothies for your kids, try to involve them as much as possible. My 3 year old likes to help me put the fruit into the blender or scoop the yogurt in.
