I luuurve salads and I’m always making them, especially during the summer. I make this one all the time, but I actually make it with all cauliflower, since broccoli usually does a number on my insides. It takes 5 minutes (if you buy the washed and cut broccoli and pre- cooked bacon from Costco)
The Ingredients:
Broccoli, cauliflower, red onion, cheddar cheese, red wine vinegar, sugar and mayo-(not pictured)
Cook the bacon.
Mix together the mayo- I hear Mariel cringing right now….. sugar and red wine vinegar.
Throw everything together in a big bowl and stir.
Let it stand for a couple hours at least to let everything merry together. (I think it’s even better the next day) Serve it up mumma!
Broccoli and Cauliflower Salad
1/2 head broccoli, cut in bite size pieces
1/2 head cauliflower, cut in bite size pieces
8 slices of bacon
1 cup grated cheddar cheese
1/4 cup chopped red onion
Dressing:
1/2 cup mayo
1/4 cup sugar
2 Tbs. red wine vinegar
Directions
Add everything together, mix dressing ingredients together, and pour over salad. Let stand for 2 hours to blend flavors.

One of my favorites, but I love the idea of using cauliflower, too! I also throw in dried cranberries. Adds SO much – you should try it.

this is my fave salad… it’s the only way I’ll actually EAT cauliflower – and I usually eat more than I probably should 🙂
