Coconut Chocolate Chip Macaroons (she: Jo-Anna)

Hi everyone!  I’m Jo-Anna, from the blog A Pretty Life in the Suburbs, and I’m so excited to be here as Mariel’s Food Contributor!  I can’t wait to share my love of all things food with you, and I hope you will find some inspiration for your kitchen!
My love for my family starts in my kitchen.  As a mother I find so much enjoyment from nourishing and loving my family with tasty and healthy meals!  But what’s life without a little fun too!  Desserts are a favourite and a fact of life in our house…it’s all about balance right?!  And if motherhood isn’t a balancing act, I don’t know what is!
While we are on the topic of motherhood and dessert, here’s a little treat that would be nice to make for Mother’s Day!
Coconut Chocolate Chip Macaroons
These cookies are so simple to make, and so delicious!
They are delicate, chewy, coconut-y and chocolatey all at the same time!  Yum!
Coconut Chocolate Chip Macaroons

Recipe adapted from Martha Stewart

Coconut Chocolate Chip Macaroons

Ingredients

  • 3 egg whites
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1 - 14 oz package sweetened flaked coconut
  • 2/3 cup chocolate chips

Instructions

  1. Preheat your oven to 350 degrees.
  2. Whip together egg whites, sugar and salt until frothy.
  3. Then stir in the coconut with a fork.
  4. Add chocolate chips, and combine.
  5. Line a baking sheet with parchment paper, or a generous amount of cooking oil spray. They will stick!
  6. Drop the mixture onto the sheet by heaping tablespoons, about 1 1/2 inches apart. They don't spread out.
  7. Bake for 18-20 minutes, or until they start to brown.
  8. Let cool, then enjoy!
These coconut cookies would make a nice little gift for your Mom or any moms in your life too!
Just wrap them up in parchment paper and tie them up with some pretty ribbon!
Homemade gifts are the best!

    I just made macaroons last night – wish I would have seen this post before then. Chocolate chips would have been great in them.
