Blueberry Lemon Pina Colada (she: Jana)

There’s just something about a summer night that begs for a nice cool drink while lounging in your favorite chair (or even better…a hammock!) on your porch or patio. Am I right? I would be relaxing every night as the sun was going down, watching a beautiful sunset and sippin’ something wonderful if it weren’t for those pesky mosquitos! I’m a magnet for them! If anyone has a good trick to keeping them away that doesn’t include dousing yourself with disgusting insect repellant I’d LOVE to hear from you!

This is a favorite summertime drink of my families. So refreshing! And although the recipe includes Lemon-lime soda, it is really good without it as well.

My little Joey is always asking to help in the kitchen. But, he is quickly run over by several older siblings who insist that they get to help too. So, yesterday while all the wild ones were out on the trampoline, I snagged Joey and he helped me mix up this super easy snack. So easy that a two year old can make it!

We just called it Ranch Snack Mix. It’s a blend of all things kids love… pretzels, Bugles, Goldfish crackers, cashews, and Ranch dressing mix.

Every year, I get so excited when the summer fruit starts to come in. There isn’t much that’s better than fresh berries. Except for fresh berries and chocolate. For breakfast. And the best part is that they have no butter or oil in them (so please don’t use fat-free ricotta, or you’ll end up with tough little muffins).

It’s the 10th of the month! Guess what that means!?!? I’ll tell you, it’s pretty fun… Each month on the 10th, TEN of my creative friends will will share a project on their blog around the same theme. These little “gems” are worth their weight in gold (or a few pounds on the scale, at least!) Even though I’m on this diet I talked about last month I just had to taste these cookies to make sure they were good enough to share…well, they most definitely are!! So much so, I have to confess I think I ate 7 of them. I just couldn’t stop. I’m weak. Very weak.

Don’t be hesitant about this recipe because of the ricotta. It makes the cookies soft and delicious…trust me, I would never lead you astray! And once the glaze hardens, they are perfect for packing up and taking to a friend, neighbor or teacher. Just think how these would brighten someones day!

Hi there! It’s Cathy from Lemon Tree Dwelling and I’m back with a last minute idea for your Cinco de Mayo party! A new twist on an old favorite: Bacon-Wrapped Mini Pepper Poppers! Colorful, fun, tasty, and not too spicy….so everyone can enjoy them!

Do you celebrate Cinco de Mayo? I have to admit….it always seems like a fun idea, but we have never really celebrated. This year feels like it might be different, though. The warmer weather is finally here….and we are in a celebrating kind of mood! These mini pepper poppers are just the right way to get the party started!

Bacon-wrapped mini pepper poppers from Or So She Says via Lemon Tree Dwelling

But, as you know, not everyone likes their peppers spicy. Jalapeno poppers easily leave out half the crowd….so why not use mini sweet peppers instead? Simply cut off the stems, remove the seeds, and stuff the peppers with your favorite cream cheese (Vegetable? Chive & Onion? Or, for a touch of spice, maybe Jalapeno??) Then wrap the peppers with bacon, secure with a toothpick, and roast until the bacon is cooked through and charred around the edges. Voila! A quick, easy, and incredibly delicious snack that everyone can enjoy!!
