You see, my mom was an expert cake decorator & did it professionally for most of her adult life. I grew up watching her & picking up a few things here & there along the way. I so wish I had paid more attention to the finer details because now that I have all her tools I feel like I have so much to learn. There is a lot to know about cake decorating!! One thing I remember her doing ALL THE TIME was creating these Parchment Decorating Bags. When you are piping icing – these simple little disposable bags are the easiest way to draw or write on whatever you are decorating. Because they are small it makes them so much easier to handle. Let me show you just how to make your own.

I’m a cake girl. Donuts, candy, cookies… I could take or leave. But, cake?? I’m all over it. Banana Cake, Strawberry Cake, Chocolate Cake and Toffee Coffee Cake, baby. This is a simple cake, that’s great served warm with ice cream, or room temp, with a dollop of whipped cream. Have you ever looked up the definition for ‘dollop’? Get this: “a shapeless mass or blob of something.” That kinda sound gross. Definitely does not do justice for the heaven that is whipped cream.

So, this Toffee Coffee Cake recipe comes from Hershey’s. I knew I needed it in my life, the minute I saw it was filled with pieces of Heath Bar. Oh, and then there’s the fact that it’s cake.

When I think of Spring, I think of birthday parties. Both my boys were Spring babies, and I love that! When they were first born, I loved that just when we were ready to venture out of our little cocoon, gorgeous warm breezes were beckoning us to go on long stroller walks. And now that they’re bigger, I love that presents, parties, and games are there for them, just when their house-bound stir-craziness is at a fever pitch.

I just love those darn things. So, while the husband was away at Scout camp, this past week, I had my little sister over to keep me company. We medicated my loneliness by painting our nails, going out to eat every day, dancing in the driveway (did you see our Instagram pics?), and scarfing Strawberry Cupcakes with Strawberry Cream Cheese Frosting at midnight. Good times. We obsess over these cupcakes and they’re perfect for using up some of your Costco strawberries. They’re also perfect for loneliness.
