Holiday Spice Monkey Bread (she: Gina)

In our house Christmas morning can be pretty busy. I’m sure it’s like that in most households. The kids get up, we have some family time & open gifts. Sometimes we get together with friends & once in a great while we travel to be with family.

This year will be quiet & I am so looking forward to it. The chaos has lessened now that the kids are older. However- one thing has not changed, the need to have something wonderful on hand for breakfast on Christmas morning.

Slow Cooker Chunky Clam Chowder (she: Gina)

Hi there everyone!!! It’s Gina from Kleinworth & Co. Hope you all are as excited about this chilly fall weather as I am. The colors have faded here in North Idaho & the trees are bare. It won’t be long before the snow has fallen. Which means it’s time for soup. I love throwing a bunch of ingredients into the slow cooker & smelling that wonderfulness drifting through the house all day long. Then when it’s dark & it’s dinner time we can sit down for a warm bowl of something delicious. My current favorite is this slow cooker Chunky Clam Chowder.

Parchment Decorating Bag

Parchment Decorating Bag {Tutorial} (she: Gina)

Hi everyone, it’s Gina visiting again from Kleinworth & Co.! Are you excited to be kicking off the Holiday Season? I know that I have a whole lot of baking to do in the next couple months & I’m sure you do too. Which is probably why October 10th is Cake Decoration Day. So to help celebrate that, I thought I would share with you all a cake decorating tutorial today.
You see, my mom was an expert cake decorator & did it professionally for most of her adult life. I grew up watching her & picking up a few things here & there along the way. I so wish I had paid more attention to the finer details because now that I have all her tools I feel like I have so much to learn. There is a lot to know about cake decorating!! One thing I remember her doing ALL THE TIME was creating these Parchment Decorating Bags. When you are piping icing – these simple little disposable bags are the easiest way to draw or write on whatever you are decorating. Because they are small it makes them so much easier to handle. Let me show you just how to make your own.

Blackberry Banana Ice Cream … a Dairy-Free Summer Treat! (she: Gina)

Happy August friends! It’s Gina from Kleinworth & Co. I’m back today to share a simple & tasty treat that my kids are absolutely LOVING. The heat is on & so we are finding all sorts of new ways too cool down & give the poor air conditioner a little break. This Blackberry Banana Ice Cream is definitely something that is gone just as fast as I can make it. But with it being just 3 simple ingredients & 100% dairy free – you can enjoy it any time of day with zero guilt.

Sour Berry Fizz … the Perfect Poolside Drink (she: Gina)

Hi all! It’s Gina from Kleinworth & Co. Hope you all are having a wonderful summer so far. For many years we lived in the desert of Nevada & endured countless scorching summers. During that time we learned a thing or two about how to cool off when the temps keep creeping higher. When it gets hot I like to whip up something quick in the kitchen & then go find some shade to cool down. One of my favorites is this Sour Berry Fizz. Just a couple ingredients & 60 seconds in the blender & then kick your feet up & relax by the pool.
This was one drink we really loved to enjoy out on the back patio while having some pool time. I would whip up a double batch & keep the pitcher out with us by the pool for easy refills while we splashed the afternoon away.

Avocado Goat Cheese Dressing (she: Gina)

Hi there! It’s Gina from Kleinworth & Co. I’m back today to share with you a quick & easy way to add a creamy & tangy avocado flavor to everything you desire. We always seem to have an aging avocado on the counter. Everyone loves them & so every trip to the market results in more avocados. But they have such a short window of time for perfection. I don’t want to waste them. So I have been using them in all sorts of recipes whenever I can. One of our new family favorites is this Avocado Goat Cheese Dressing.
It’s the perfect creamy dressing. My daughter (who is just crazy for salad) just loves having this in place of her regular Ranch or Italian dressing. The avocado flavor is perfect.

Matcha Shake … A Healthy but Delicious Dessert (she: Gina)

Hi there! It’s Gina from Kleinworth & Co. Are you all enjoying the longer days & warmer weather? I am! I love it when the weather is just sunny & glorious & the days seem to go on forever. Sure makes me want to get out of the house & enjoy the local sights. We like to head out for family bike rides or visit one of the 17 surrounding lakes in our area. I definitely love taking in all the scenery & getting out to spend time together as a family. Because it seems we are always on the go this time of year, we are always looking for quick & easy ways to eat & go. Sometimes that means a shake or smoothie to fill us up, pack in all those nutrients & keep us going all day long. One of my absolute favorites is this Matcha Shake. It’s healthy & yet absolutely delicious. I feel like I’m drinking a dessert- but zero guilt.

Happy Spring Everyone!! It’s Gina from Kleinworth & Co. again. Do you love spring?? I am so excited for the warmth to come back. I really enjoy this time of year when the days are longer, the sun shines more & there’s more fresh fruit available. I just feel better when I have an abundance of fresh fruit & vegetables stocked in the house. I know that I always have a healthy snack available whenever I want it. Plus – I love baking with fruit, especially berries. They are like little gems with those gorgeous, vibrant colors – they just make me happy.
I was so happy to do my usual stock up run for produce & my house is overflowing with colorful foods. I was looking forward to using some in some test recipes. Since we are on the countdown to Easter I am already planning my celebration meal. This means that I am making many test recipes to figure out what exactly will end up on the final menu. I created these Blackberry Crumb Bars as a little snack that guests can grab while chatting or would also work well topped with a scoop of vanilla ice cream. I think they may just make an appearance on Easter day. They have just the right ratio of crumb & berry – so yummy.

Irish Soda Buttermilk Scones (she: Gina)

Happy March Everyone!!!

It’s Gina from Kleinworth & Co again! I’m back today with St. Patrick’s Day on my mind & ready to share one of my favorite Irish recipes. Do you like St. Patrick’s Day? How do you celebrate? My hubs always loves to have corned beef & cabbage. That’s his specialty. But I like to make a little something too – so I whip up these Irish Soda Buttermilk Scones to go on the side. The nice part about them is that they work well as a side to dinner & the leftovers make a great breakfast when paired with jam. These are so incredibly simple to make. No waiting for them to rise & bake time is only 20 minutes. You can literally whip these together while doing your other dinner prep. For breakfast I just heated the leftovers & spread a little Blueberry Freezer Jam on each bite. The kids loved it.

Valentine Chocolate Sugar Cookies (she: Gina)

Hi everyone! It’s Gina from Kleinworth & Co. again.

I’m back to share with you an fun little Valentine’s Day treat today. I absolutely love these cookies. Their fun Valentine colors…..the fact that they are chocolate. Love Love Love. I originally started with the mindset that these cookies would be frosted. But then as I realized that I had just purchased SO MANY bags of M&M’s with the intention of using them in baking. I am running out of time to make goodies for Valentine’s Day. Before long all these red & pink candies won’t be able to be used in my baking & there they will sit. So I scrapped the frosting idea, cut out a lot of time in the kitchen & added them to these fun Chocolate Sugar Cookies to make some really cute treats.
