Boy do I have a fun lunch idea to share with you this week! You are going to love this turkey tomato avocado cheese melt because it is quick and delicious. It’s Jen from PinkWhen, and I don’t know about you, but I have been on a major health kick lately. (Quite possibly because I just turned 40 and realized I gained 10 pounds out of nowhere. Ugh.) The best part about this sandwich is that it is a quick lunch that takes less than 10 minutes to make. Score!
Turkey Tomato Avocado Cheese Melt
Here is what you will need to create it for you and a friend:
- 4 slices of honey wheat bread
- 4 slices of turkey
- 1 Roma tomato (sliced)
- 1 small avocado (sliced)
- shredded cheese (I used mozzarella and cheddar)
- salt, pepper, cilantro to taste
Heat the oven to 400.
On a foil lined cookie sheet, place the four pieces of wheat bread. Top each piece with a slice of turkey, Roma tomato slice, and 2 slices of avocado.
Sprinkle a little salt, pepper, and cilantro leaves to taste. Then cover completely with shredded cheese.
I baked mine in the oven for about 5 minutes. You may want to go a little less, or a little longer. Just don’t let the bottom of your bread burn. (Ahem, I may have had that happen before.) Each slice is about 243 calories, and I was forcing myself to eat two.
You can make this turkey tomato avocado cheese melt in under 10 minutes. Talk about quick! Did I mention delicious?
