Spinach artichoke dip is one of my very favorites. I order it from every restaurant that has it on the menu. And I’m not too picky about the vehicle I use to transfer it from bowl to mouth. Although chips or pita slices are often the preferred choice, I have been known to reach right for a spoon. As embarrassing as it is to admit, I’ve even scraped the bowl clean with my finger. Ask my husband. He’ll tell you.

Although my family aren’t too fussy when it comes to dinner time (ok, we’re all human dust-bins really), I do struggle with meat-free dishes.
If I serve up a completely vegetarian dish, I usually find everyone looking up expectantly, waiting for me to put the ‘main dish’ on the table.
I’ve had a couple of great successes (my Cheesy Veggie burgers were a real hit – no bacon required yay!), but for the most part, trying to get one or two meat-free dishes in per week simply isn’t going to happen.
Now fish – I know I can get away with. So meals like this Creamy Tomato Fettuccine with Salmon are my savior in trying to reduce the meat consumption just a little.
So, last week on the ‘Or so she says…’ Facebook page, I mentioned that I had only been to Trader Joe’s grocery store one time. The time I went, I felt so overwhelmed by all the unique products, that I just wished someone would tell me everything that I must try. It’s a good 45 minutes from my house, so it’s not like I can go very often, so I want to get the good stuff while I have the chance!
Lucky for me, the Facebook page was swarming with ladies who are Trader Joe’s junkies. They shared hundreds of their most favorite products with me! Soon enough, they started asking for an official list of all the products that were shared, so they could remember to buy the things they hadn’t tried yet, but were suggested. I promised I would get that together.
I remember as a child, when we had salad it was a combination of lettuce, tomatoes and sometimes cucumber. Nowadays salads are made up of a wide range of meats, veggies, fruits and cheeses. I love a good salad and this one is a good one!
My grand kids love it. We had it for Sunday dinner and my youngest grand son told me, “Granny that salad is popping!” He is so funny, but in all seriousness if you want something that is nutritious and a quick meal, this is your salad.
