I thought it would be fun to create a Disneyland Vacation Journal to help capture experiences from a vacation in a child’s perspective. I designed a bunch of fun kid-friendly templates with themed writing prompts to help give kids a jumping off place for recording their experience. There are also several blank photo pages so they can glue in photographs, ticket stubs, maps, receipts, etc. These books are easy to make and simple to use! Since my kids love helping in the kitchen, I thought it would be fun to let them help put together a fun and healthy snack. I had some yummy summer fruit in the fridge and decided fruit kabobs would be fun to make with the kids. I didn’t have any skewers but I had toothpicks, so mini fruit kabobs it would have to be. And they loved it!!
These days, with two kids, shopping can be a huge challenge. Whether it’s for groceries or household goods, I hate securing everyone in the car, lugging them in and out of stores (which is no fun for them, right?!), searching for things on my lists, all the while trying to keep track of everyone. This meal does have several components, but if you also plan a salad or enchilada or taco night using the same meat it will cut your prep time and be well worth your while. While the recipe is called sweet pork nachos, I think that substituting some marinated grilled chicken or steak would be equally delicious here!
