Pizza night is a weekly thing at our house. We usually have it on Friday and make it a pizza and movie night and it has been something that the kids always really look forward to and a great way to kick off the weekend. It’s one of my favorite nights to cook because no one whines about pizza–and homemade pizza is much faster and easier than you might think! Chicken pesto pizza is a new favorite in our families, and is worth the little extra effort to make homemade dough.
Copycat IHOP Cheesecake Pancakes (she: Mariel)
All I had to hear was Copycat IHOP Cheesecake Pancakes and I knew I needed to make them ASAP and get them in my belly. And, the idea of smothering them in strawberry or blueberry sauce takes this to a whole other level. Come to mama!!
IHOP could easily be renamed IHOT, International House of Torture, because it’s practically impossible to settle on one menu item. I want to order like 7 things, all for me. Torture! But, how awesome is it that now we can all make a knock-off recipe of theirs, Copycat IHOP Cheesecake Pancakes, thanks to the Food Network?!? I found this recipe in their magazine years ago, ripped it out, and had it stuffed in the back of my cookbook cupboard. I’m so glad I found it… heaven on a plate.
Chicken & Cottage Cheese Enchiladas (she: Leesh & Lu)
If you have rotisserie chicken or precooked and shredded chicken on hand it makes assembling these enchiladas a breeze. They are also make-ahead friendly, meaning you can make them in the morning and put them in the fridge until you’re ready to bake them. We love make-ahead meals that make dinner hour less hectic.
White Chocolate Raspberry Jello Cake (she: Jana)
If you want to impress your special someone for Valentine’s Day look no further than this cake! I like to make a fun special dinner for my family on Valentine’s Day with a decadent dessert. Don’t let this white chocolate raspberry jello cake fool you, though. It’s a dressed up box cake mix with everyone’s favorite jiggly indulgence on top.
Loaded Breakfast Skillet – Filling and Delicious! (she: Leesh & Lu)
This loaded breakfast skillet is our go-to brinner when we have veggies in the fridge that need to be used up. It’s so fast, filling, and easily adaptable to whatever veggies you have on hand.
Instant Pot: Southern-Style Bean Dish – Sweetened with Brown Sugar (she: Jana)
This has always been called Grandmas Bean Dish in our family. My Grandma Potter, who was born and raised in Kentucky, used to make this for her family growing up and then my Mom did the same for her family & now it’s my turn.
Instant Pot Recipes: Creamy Tomato & Butternut Bisque (she: Leesh & Lu)
This instant pot tomato bisque is the smooth, veggie-packed, healthy version of your childhood favorite. When it’s blended smoothly, whomever you feed it to will be none the wiser that it’s filled with goodness. When we serve it to our kids, we just tell them it’s tomato soup–they wouldn’t generally be thrilled at the idea of eating butternut squash– and they devour it!
Blackberry Muffins – Perfect for Breakfast On The Go! (she: Jana)
Blackberry muffins are the perfect mix of tart and sweet, and they’ll make a great on-the-go breakfast for the whole family! Hey everyone! It’s Jana….back again! Quick Whole Wheat Dinner Rolls (she: Leesh and Lu)
We love serving rolls or bread with our dinner, especially during soup season! Usually yeast breads require several hours of advanced planning, which isn’t always do-able on a busy weeknight. These quick dinner rolls, however, cut out the first rise on the dough and are ready in under an hour.
