‘Tis the season for pumpkin everything everywhere – including at the Disneyland Resort. My family recently went to Disneyland during Halloween Time and we got to try the famous, seasonal pumpkin twists. We loved them so much that I created our own copycat Disneyland pumpkin twist recipe when we got home. I love having salad for dinner, but have kind of steered away from it while I’ve had toddlers at home. Without any, or many, molars it’s hard for them to chew and I don’t like to have to make a separate dinner for them. It took a while for me to figure out that the little ones love deconstructed salad just as much I love having it for dinner. Duh.
Since my kids love helping in the kitchen, I thought it would be fun to let them help put together a fun and healthy snack. I had some yummy summer fruit in the fridge and decided fruit kabobs would be fun to make with the kids. I didn’t have any skewers but I had toothpicks, so mini fruit kabobs it would have to be. And they loved it!!
Sweet Pork Nachos could be made as your main meal, or as a meal made from leftovers the next day! This meal does have several components, but if you also plan a salad or enchilada or taco night using the same meat it will cut your prep time and be well worth your while. While the recipe is called sweet pork nachos, I think that substituting some marinated grilled chicken or steak would be equally delicious here!
