It has felt like spring for weeks! Which makes me want everything lemon! In my food, in my laundry, in my cleaning products, even in my car. Everywhere!! That’s why I decided it was time to make lemon blueberry drop scones.
All I had to hear was Copycat IHOP Cheesecake Pancakes and I knew I needed to make them ASAP and get them in my belly. And, the idea of smothering them in strawberry or blueberry sauce takes this to a whole other level. Come to mama!!
IHOP could easily be renamed IHOT, International House of Torture, because it’s practically impossible to settle on one menu item. I want to order like 7 things, all for me. Torture! But, how awesome is it that now we can all make a knock-off recipe of theirs, Copycat IHOP Cheesecake Pancakes, thanks to the Food Network?!? I found this recipe in their magazine years ago, ripped it out, and had it stuffed in the back of my cookbook cupboard. I’m so glad I found it… heaven on a plate.

These breakfast burritos are a favorite at both of our houses for both quick dinners and for camping. For me to sleep in the wilderness, the food has got to be pretty darn good and these breakfast burritos don’t disappoint. They can be made 100% ahead of time and wrapped in foil until you’re ready to heat them up over the campfire or camp stove. Having everything prepped and ready ahead of time makes camping so much more enjoyable for us!
My girls recently have come to love hashbrowns because they are similar enough to french fries. It was those words that I said that convinced them to try them, “they taste like french fries”. And they haven’t turned back! My 3 year old said last week when we had these, “Mom, I just can’t stop eating these”! It was too cute!

Fresh blueberries and lemon are made for each other. Add them to a scone and you’ve got an amazing treat! And then to top it all off, I added a lemon glaze! Super Yummy!
So, this recipe for Bacon and Egg Breakfast Muffins actually came from my kiddos. They learned how to make it in their cooking class, and so far it’s been one of our favorite recipes that they’ve come home with! I loved how moist and cornbread-like they were and the southwestern flavor. My kids loved that a whole egg was cooked right in the middle.
