Kale Chips ~ Healthy Snack that Kids Love!

Has anyone else noticed, besides my family, that I haven’t been cooking as much?? It’s true. I totally agree with your responses, when I asked… we need to get more recipes on the blog! Everyone suffers when I’m on a diet. Just teasin, but I’m pretty sure at least once a week my kids will say, ‘Mom, do you fit into your jeans YET?!?’ They’re itching for some pancakes! Sunday is my ‘free day,’ and my kids don’t want me to make some never-made-before blog recipe, they want their old favorites. But we’ll compromise, and I promise I’ll get you (and me) some new recipes! …ya just gotta wait until my free day. EXCEPT for this recipe, Kale Chips. I could eat this any day of the week. It’s healthy, delicious, and a great snack. Even better, I’m not kidding… kids love it.

So, I recently shared a recipe for Broccoli Cheese Soup and I promised that I would share the soft pretzel recipe that was in the picture. Today’s the day. I’ve already bragged about my sister-in-law, Bonnie, who is one of the many that supply me with delicious recipes, but this is another one of hers. Anyone who has ever tasted Cookie Butter can tell you just how amazing it really is….so amazing that, once you’ve had it, you can’t stop thinking about it! Which leads you to do things like eat it by the spoonful straight from the jar, and tell everyone you know about it, and come up with as many different ways as you can to use it (mostly because eating it straight from the jar only feels acceptable for so long….)

Well, with the start of the school year rapidly approaching, I thought it might be time for me to start dreaming up some Cookie Butter after-school snacks. I have two kiddos in school this year – one starting kindergarten and another starting second grade, and both of them LOVE Cookie Butter!

My little Joey is always asking to help in the kitchen. But, he is quickly run over by several older siblings who insist that they get to help too. So, yesterday while all the wild ones were out on the trampoline, I snagged Joey and he helped me mix up this super easy snack. So easy that a two year old can make it!

We just called it Ranch Snack Mix. It’s a blend of all things kids love… pretzels, Bugles, Goldfish crackers, cashews, and Ranch dressing mix.

Hi there! It’s Cathy from Lemon Tree Dwelling and I’m back with a last minute idea for your Cinco de Mayo party! A new twist on an old favorite: Bacon-Wrapped Mini Pepper Poppers! Colorful, fun, tasty, and not too spicy….so everyone can enjoy them!

Do you celebrate Cinco de Mayo? I have to admit….it always seems like a fun idea, but we have never really celebrated. This year feels like it might be different, though. The warmer weather is finally here….and we are in a celebrating kind of mood! These mini pepper poppers are just the right way to get the party started!

But, as you know, not everyone likes their peppers spicy. Jalapeno poppers easily leave out half the crowd….so why not use mini sweet peppers instead? Simply cut off the stems, remove the seeds, and stuff the peppers with your favorite cream cheese (Vegetable? Chive & Onion? Or, for a touch of spice, maybe Jalapeno??) Then wrap the peppers with bacon, secure with a toothpick, and roast until the bacon is cooked through and charred around the edges. Voila! A quick, easy, and incredibly delicious snack that everyone can enjoy!!
