Hey all! Leesh & Lu here. I guess it might be a stretch to really call this a recipe, so let’s just call it dinner (or breakfast!) inspiration. This is one meal I will never tire of. I ate it at least 4x per week for 2+ years and always looked forward to it. You can customize the ingredients any way you’d like, and even try your hand at making your own english muffins some time!

Happy New year everyone It’s Jana from Double the Deliciousness. I love the fresh start that a new year brings. It’s a great time to reflect and see what improvements you can make in your life. One of my fresh starts/goals that I try to achieve every year is to eat healthier and exercise regularly. I always start off doing really well because I think my body is in a state of sugar/junk overdose and my body really likes the idea of vegetables & good for you food!

I love swiping recipes from my mom. Seriously, if she makes it and serves it, it’s good. Well, unless it has mayo or onions in it… then, it can’t be good, cause I’m still 5 years old. Have you ever tried gnocchi? I’m a HUGE fan of it, and have been ever since my sister worked at an Italian restaurant back in high school. I would order gnocchi with marinara sauce every chance I got….and it always felt like such a treat! Since having kids I’ve rediscovered it….and now my whole family loves it! (Score!)
Chicken Pesto Sandwiches
Chicken salad is one of my most favorite things! In Mormon culture, it’s pretty expected to have chicken salad sandwiches after every baby blessing, missionary farewell, and missionary homecoming… at least, in Utah. And I must say, I don’t mind at all. It definitely beats the green Jell-O, which I’ll have you know I have NEVER seen at a Mormon gathering. But, I’m still looking. There is this fantastic BBQ place in town (Holy Smoke) and they serve the green Jell-O, as a side of humor, but that’s about it. Anyway, so if you’re blessing your baby or basically, having chicken salad sandwiches, invite me. I want some!

Happy Thursday to all my friends at Or So She Says! And not just any Thursday….but the Thursday before Memorial Day weekend….the unofficial kick-off to summer. I grew up on Italian Sausage Sandwiches….my mom used to make them in the crock pot with green peppers and marinara sauce….and what I love about them is that they are jam packed with flavor! Whereas burgers and hot dogs (the usual grill suspects) rely on the condiments to do all the work, Italian Sausages hardly need condiments at all! (Of course, the condiments definitely don’t hurt….!)

Our Favorite Picnic Sandwich ~ Perfect for Summer Time!
I recently shared this post with The Crafting Chicks readers. Today, I wanted to share it with you! It’s something you’ll find me making ALL THE TIME in the summer. It’s nothing fancy, but the kids are always begging for me to make this picnic sandwich. And, I’m happy to… it’s easy, delicious, versatile, easy to pack, and feeds a crowd.
So, I have two grocery stores right by my house… a Fresh Market and a Wal-Mart Neighborhood Market. I think we all have the list of things we buy at one store and not the other. For example, most of my produce I get at Fresh Market, although it’s not anything too special. I LOVE the produce at Harmon’s… but, it’s a drive. However, if I need avocados, I go to Wal-Mart, because I know they’ll be ripe, hopefully not over-ripe.
Mediterranean Tuna Wrap (she: Cathy)
One of our favorite “go-to” sandwiches is tuna melts….but since we typically love tuna melts with tomato soup, it’s a little hard to enjoy them in the heat of summer! So I decided to take one of our favorites and re-make it, summer style. We LOVE all things Mediterranean, especially in the summer….and let me just tell you, Mediterranean + tuna = delicious!!
I used so many of my favorite ingredients in this Mediterranean Tuna Wrap – olive oil, feta cheese, sun dried tomatoes, kalamata olives, and fresh veggies – mixed them with albacore tuna, and wrapped them in a whole wheat tortilla.
