This has always been called Grandmas Bean Dish in our family. My Grandma Potter, who was born and raised in Kentucky, used to make this for her family growing up and then my Mom did the same for her family & now it’s my turn.
This instant pot tomato bisque is the smooth, veggie-packed, healthy version of your childhood favorite. When it’s blended smoothly, whomever you feed it to will be none the wiser that it’s filled with goodness. When we serve it to our kids, we just tell them it’s tomato soup–they wouldn’t generally be thrilled at the idea of eating butternut squash– and they devour it!
Think of this recipe as tomato soup’s older, more sophisticated brother. The roasted red peppers in this tomato soup really give it an amazing flavor! Imagine snuggling up during the cold weather and devouring a bowl of this tasty, warm soup.
Usually what we’re after when we scour the internet for recipes is something quick, easy, and tasty that will fill tummies at our dinner tables. Let me tell you, this family friendly minestrone recipe fits the bill perfectly. I can’t really tell you that it’s health food. Let’s just make an exception this one time because, well…bacon. It’s not a lot, but it brings to much flavor to this dish.
Maybe it’s because I’ve had a cold since… oh, Christmas. Really! Is this happening to anyone else?? The never-ending sickness? Cross my heart, hope to die. But don’t take my word for it – go ahead and try it for yourself. It’s SO easy to make that there’s really no excuse not to.
Since I’m a busy mama with a preschooler, toddler and now a newborn, I wanted to share with you one of our family’s favorite winter recipes using the greatest kitchen appliance every invented (in my opinion at least) … the slow cooker.
I love the simplicity of throwing all the ingredients in during the morning hours, setting the timer and walking away allowing it to slowly cook a savory and mouthwatering dish to be ready just in time for dinner.
I probably use my slow cooker at least twice a week, even more now that my days just got a lot busier!

I don’t know about where you live….but where I live, it’s COLD! Not as cold as it has been, that’s for sure, but cold enough that you don’t really want to be outside. EVER! And cold enough that when you are outside for any extended period of time, all you want to do is come back inside, put on some sweatpants, and eat a big bowl of soup! This White Bean Pesto Soup is the perfect thing to cozy up to on a cold winter day. It combines some of my favorite things….and best of all, it’s topped with a big spoonful of pesto to give it an amazingly rich and delicious flavor! So even if you did happen to find yourself outside in the cold, you wouldn’t mind. Because at least you’d know you have THIS to look forward to!

I’m SO excited to be back this month to share another yummy with y’all! I love to make delicious soups but I especially love it in the winter time! Do you love butternut squash? I do, but sometimes it’s hard to cut it all up when you’re in a hurry. I found some awesome frozen butternut squash at the grocery store and it makes this soup lickity-split to throw together!
So, this recipe has actually been shared on the blog before. I’ve been trying to go through some of my old ones with super crappy pictures and update them, so they actually LOOK good, besides just taste good. I recently updated a great recipe for Chicken Alfredo. Today it’s our favorite Broccoli Cheese Soup. I love making this soup for several reason… 1. I love soup. 2. I love broccoli. 3. I love cheese. 4. It uses REAL cheese. 5. It’s delicious. Five good reasons, I would say. And, now is the perfect time to bust out those soup recipes. Be sure to add this to your collection!
