One of my favorite things about summer is when the ripe strawberries come to Costco. I love buying those big containers and munching on fresh strawberries all day long. Mmmmm! I just love those darn things. So, while the husband was away at Scout camp, this past week, I had my little sister over to keep me company. We medicated my loneliness by painting our nails, going out to eat every day, dancing in the driveway (did you see our Instagram pics?), and scarfing Strawberry Cupcakes with Strawberry Cream Cheese Frosting at midnight. Good times. We obsess over these cupcakes and they’re perfect for using up some of your Costco strawberries. They’re also perfect for loneliness.

My mom has been making this Double Chocolate Zucchini Cake since I was a little kid and it has always been a favorite of mine. You start with a simple chocolate cake, mix in some zucchini for moisture, sprinkle it with some chocolate chips, and top it all off with a simple powdered sugar glaze. This cake is a great way for any of you who actually have a live producing plant to use up your zucchini. Or if you are like me this cake is totally worth buying some zucchini at the store. Trust me.

Cinnamon Bear Popcorn

I’ve been on a snack kick lately. It teeters back and forth between unhealthy and healthy. Right now, I’m leaning towards… um, something healthier than an ice cream brownie sundae, with every topping in the world. Every topping. Oh, and whipped cream. So, I actually think I’m doing pretty darn good. Cinnamon Bear Popcorn, definitely the better choice.

Anyway, the ladies at church put together and a cookbook. I love it! It’s been my favorite book because there are so many fabulous cooks in my ward, it’s fun to try out their recipes. You’ll probably be seeing a lot more recipes from there.

And the best part is that they have no butter or oil in them (so please don’t use fat-free ricotta, or you’ll end up with tough little muffins).

It’s the 10th of the month! Guess what that means!?!? I’ll tell you, it’s pretty fun… Each month on the 10th, TEN of my creative friends will will share a project on their blog around the same theme. These little “gems” are worth their weight in gold (or a few pounds on the scale, at least!) Even though I’m on this diet I talked about last month I just had to taste these cookies to make sure they were good enough to share…well, they most definitely are!! So much so, I have to confess I think I ate 7 of them. I just couldn’t stop. I’m weak. Very weak.

Don’t be hesitant about this recipe because of the ricotta. It makes the cookies soft and delicious…trust me, I would never lead you astray! And once the glaze hardens, they are perfect for packing up and taking to a friend, neighbor or teacher. Just think how these would brighten someones day!
