Gingerbread Crumb Cake

I’m a huge fan of fall flavors… apple, pumpkin, caramel, ginger, you name it. My sister-in-law, Bonnie, who has fabulous recipes (my favorite cinnamon rolls and chewy cereal treat!) hooked me up with this new favorite, Gingerbread Crumb Cake. So, Dan is funny. He will basically only eat chocolate desserts, so if I make anything non-chocolate, i.e. Gingerbread Crumb Cake, I’m on my own. So, I have to plan my non-chocolate dessert making very, very carefully. Will I be able to keep myself from eating the whole thing? Do I know anyone in close proximity who will help me eat this? Can I find some privacy to eat a third helping, if I so choose to? … lots to consider.

I’m currently working with a personal trainer, a rock-hard body building chick, who kicks my trash on a regular basis, which I seriously need. I have been allotted Sunday as my ‘free day,’ where I can eat what I want. That’s it. So, I make my chosen dessert Sunday (after planning it all week), and eat it Sunday.

Hey, Everyone! It’s Cathy from Lemon Tree Dwelling here to share a simple and delicious fall recipe with you. I don’t know about you, but as soon as the leaves start to fall, my mind turns to all things pumpkin! Pumpkin bread, pumpkin lattes, pumpkin pie…..is there anything better at this time of year? I’ve been having a blast getting creative with pumpkin in my Lemon Tree kitchen….and I’m so excited to share this fun and festive recipe with you today!

There are some things that go particularly well with pumpkin…..like ginger…..and some things that go particularly well with everything…..like white chocolate! So, I thought, why not mix them all together!? And, since I love all types of candy bark, I thought it would be fun to make one specifically for fall. For all the pumpkin lovers out there!

The leaves are turning around our neck of the woods and it’s put me in the mood for some savory soups…

AND there’s not much that beats a slow cooker savory soup- I love to throw it together in the morning and wha-la! Ready to enjoy when you walk in the door that evening… OK. Well, there are a couple of quick things to do to finish it off but you get the idea 🙂

Chicken Alfredo ~ My Husband is Obsessed!

So, this is actually an old post. I mean REALLY old… one of my firsts on the blog! The pictures were literally so horrible that I can’t imagine that one single person would ever want to make it. But, since the recipe is a fave in my house, I figured it was worth a little redo and re-post.

It’s not reasonable to go to Olive Garden every day, so every woman needs a fab and easy chicken alfredo recipe. I found this one online, way back in the days, can’t remember where (I think maybe All Recipes or one of those big collection sites.) But, it’s fabulous. My husband, a self-proclaimed alfredo snob, swears this is his favorite. He says just as good, probably better than the O.G. Whoo! That’s always fun to hear. 🙂 Served with a green veggie and some garlic bread… mmm, baby.

Slow Cooker Curried Chicken and Chickpea Stew

On a recent family vacation to Bear Lake, my sister-in-law (and lovely assistant), Rebecca, was in charge of dinner for the night. She made this fabulous meal that everyone devoured and I realized this girl has been holding out on me! I instantly demanded she give me all of her good recipes, and like a good assistant should, she did. I guess I’ll keep her around a little longer. 🙂 Anyway, this Slow Cooker Curried Chicken and Chickpea Stew is one of the recipes she emailed me. My kids love Indian food and I love an easy meal in the slow cooker, so I knew this was just the one to try first. Yes, my friends. Yes. It was scrum-diddly-umptious. I’m sure she’s freaking out right now because it probably looks different than her recipe. Last minute, I was feeling naughty and dropped a bar of cream cheese in the stew to make it more of a creamy gravy, rather than a soup. But, it was awesome both ways. We were taste-testing it with the cream cheese and without, and none of us could decide. So, I’ll share the recipe as given and if you want to add cream cheese, feel free. The only other change I made, okay, well two… I forgot to buy onions, so I just gave a few shakes of dehydrated onions. Also, because I don’t do tomato chunks, I used crushed tomatoes instead.

Hello, Or So She Says readers!! It’s Cathy from Lemon Tree Dwelling, back with another fun recipe to share with you. This time, I’m using Cookie Butter! Anyone who has ever tasted Cookie Butter can tell you just how amazing it really is….so amazing that, once you’ve had it, you can’t stop thinking about it! Which leads you to do things like eat it by the spoonful straight from the jar, and tell everyone you know about it, and come up with as many different ways as you can to use it (mostly because eating it straight from the jar only feels acceptable for so long….)

Well, with the start of the school year rapidly approaching, I thought it might be time for me to start dreaming up some Cookie Butter after-school snacks. I have two kiddos in school this year – one starting kindergarten and another starting second grade, and both of them LOVE Cookie Butter!

Frozen Peppermint Patty Pie (she: Jana)

One of my favorite treats is a York Peppermint Patty straight from the freezer. I love going home during the summer because my parents always have a big box of them stored in their freezer. What a delight! (I don’t dare do that at home or I would constantly binge!) And incidentally that’s not the ONLY reason I like going home!:)

And if there’s one thing better than a frozen peppermint patty, it’s a Frozen Peppermint Patty PIE!! And it literally takes about 10 minutes to throw this bad boy together & you don’t have to worry about heating up your kitchen in the process! So throw this together and …taste the sensation!

Baked Banana Oatmeal

I’m a huge fan of oatmeal, so any oatmeal recipe will quickly peak my curiosity. I’ve had this recipe for Baked Banana Oatmeal kickin’ around the kitchen for a while now, just waiting for me to make it. I tore it out of the Parent & Child magazine and had a hunch it would be perfect for my family. And, it was! …especially with the addition of chocolate chips. It made plenty, was delish, and it’s always nice when I can serve everyone at once. I was afraid it wouldn’t be enough, so I doubled the recipe. But, it made tons! I had an entire 9×13 pan filled and 6 ramekins. So, we’ve been eating this for a couple days now.

Mom’s Awesome Potato Salad

I’m a little snobbish, when it comes to Potato Salad. I don’t do sweet pickles, sweet anything, or onions. I’m all about lots of dill pickles, hard boiled eggs, and red potatoes. Mmmm, baby. And, my mama makes it right. All the good stuff, PLUS her secret ingredient, Salad Supreme Seasoning. Lots of it. I’m talking the whole dang bottle, hence the orangey-yellow color. Don’t let it scare you. It’s the best. I could make a full meal out of this potato salad, forget the whole ‘side dish’ thing.

Mediterranean Tuna Wrap (she: Cathy)

One of our favorite “go-to” sandwiches is tuna melts….but since we typically love tuna melts with tomato soup, it’s a little hard to enjoy them in the heat of summer! So I decided to take one of our favorites and re-make it, summer style. We LOVE all things Mediterranean, especially in the summer….and let me just tell you, Mediterranean + tuna = delicious!!

I used so many of my favorite ingredients in this Mediterranean Tuna Wrap – olive oil, feta cheese, sun dried tomatoes, kalamata olives, and fresh veggies – mixed them with albacore tuna, and wrapped them in a whole wheat tortilla.
