Hi everyone! It’s Gina from Kleinworth & Co. again.

I’m back to share with you an fun little Valentine’s Day treat today. I absolutely love these cookies. Their fun Valentine colors…..the fact that they are chocolate. Love Love Love. I originally started with the mindset that these cookies would be frosted. But then as I realized that I had just purchased SO MANY bags of M&M’s with the intention of using them in baking. I am running out of time to make goodies for Valentine’s Day. Before long all these red & pink candies won’t be able to be used in my baking & there they will sit. So I scrapped the frosting idea, cut out a lot of time in the kitchen & added them to these fun Chocolate Sugar Cookies to make some really cute treats.

Heart Shaped Puff Pastry Pockets (she: Maria)

Since Valentine’s Day is coming up soon, I thought I would share this fun and easy (and so delicious!) sweet treat with you today! These little heart shaped puff pastry pockets would make for a great special breakfast or snack, and a box of these would make for a tasty gift on Valentine’s Day, or any other day!

Alright, who is going to be the first person to look at my picture and tell me that’s not Baked Ziti… it’s penne… ?? I know, I know! I kinda just like penne noodles better because they’re not so big. But, penne, ziti, rigatoni… whatever you choose, your family will love this. I know mine does! It’s man-friendly (plenty of meat), kid-friendly (no onion or tomato chunks), and mom-friendly (easy to make!) When I ask the kids what to make for our big Sunday dinner, this recipe for Baked Ziti is often at the top of the list.

Chocolate Peanut Clusters ~ Easy Valentine’s Day Treat!

It makes sense that chocolate peanut clusters would be easy to make, but I think I never realized just HOW easy they are to make! I’m talking, it takes 3 minutes to prepare, 3 minutes to drop in clumps on wax paper, and 5 seconds to stick in the fridge. So, if you have 6 minutes and 5 seconds to spare, you could easily make peanut clusters.

These simple Corn Bread Muffins are one of my favorites and they are so quick and easy to throw together, they almost always make an appearance with any soup we have. They have just the right amount of sweetness in them and they’re not dry and crumbly like a lot of corn bread can be. They can be eaten plain, with butter or honey, jam or my favorite…maple butter. They make the perfect addition to your favorite soup. And if you’re planning on having soup or chili for the Super Bowl (Go BRONCOS!!! Yes, I’m a Coloradan and a Manning fan!!!) these would make the game (and soup!) even better. So check them out and add them to your party line up (or maybe just your next dinner).

I don’t know about where you live….but where I live, it’s COLD! Not as cold as it has been, that’s for sure, but cold enough that you don’t really want to be outside. EVER! And cold enough that when you are outside for any extended period of time, all you want to do is come back inside, put on some sweatpants, and eat a big bowl of soup! This White Bean Pesto Soup is the perfect thing to cozy up to on a cold winter day. It combines some of my favorite things….and best of all, it’s topped with a big spoonful of pesto to give it an amazingly rich and delicious flavor! So even if you did happen to find yourself outside in the cold, you wouldn’t mind. Because at least you’d know you have THIS to look forward to!

I’m SO excited to be back this month to share another yummy with y’all! I love to make delicious soups but I especially love it in the winter time! Do you love butternut squash? I do, but sometimes it’s hard to cut it all up when you’re in a hurry. I found some awesome frozen butternut squash at the grocery store and it makes this soup lickity-split to throw together!

Stabilized Whipped Cream ~ Where have you been all my life?!?

Last week, my son was flipping through my Lion House cookbook, looking for a dessert for Sunday dinner. Sunday dinner is kind of our big sit down, delicious meal. That’s right, my friends… I don’t cook every day. Some nights I make Kraft Macaroni & Cheese, some nights I make turkey sandwiches, tacos, or frozen chicken nuggets. Some nights, I don’t do anything and we just fend for ourselves. But Sunday, we feast. So all week, my kids and I are excited, planning what our big meal is going to be. Anyway, this past Sunday my son found a recipe for a Chocolate Cream Layered Cake that he wanted me to make. So, we had chicken enchiladas, apple salad, and chocolate cake for dessert.

While looking over the recipe, I quickly noticed the directions for Stabilized Whipped Cream. What the? I had never heard of such a thing. Have you??

Happy 2014 everyone…hopefully it is off to a great start! After the holidays are done and the new year is upon us, I usually find that I have accumulated a pantry full of baking ingredients, haphazardly thrown onto the shelves in my haste to get everything done in those last crazy weeks of December. Then in January comes the resolution to be organized. But all of those ingredients! What is a girl to do but keep on baking? Today I am sharing a concoction that came together because I was trying to use up some of those pantry items so that I can get down to organizing. Please tell me I am not the only crazy person that does that…?
